Raising Buffalo Burgers

Bison bison. An animal so good that they named it twice.
On crisp days like today, it's easier to imagine that some two hundreds years ago there were tens of thousands of American bison grazing on the rich grass lands that naturally cover these rolling hills.
I just discovered that there is a small herd not far from my office that a local rancher raises.
I have a weakness for photography, particularly when it comes to marine life and big land animals. I've been all around the world, taking photos of grizzly bear in Alaska, orangutan in Borneo, pelagic sharks in Palau . . . . Now if only I could be a little better with my camera to do justice to the subjects.
The two male American bison above decide to play sumo wrestler for about fifteen seconds. Actually, it's probably some dominance thing. Then the two just as quickly go back to being a bump in the log, standing still.
This rancher is raising future buffalo burgers. My stomach growls. I catch myself thinking how lean and tasty buffalo meat is. It's the very best burger anyone could ever want to eat. Hmm, I immediately make a list in my head of at least two casual dining systems that serve buffalo burgers from their franchised units.
